Just passing through; gotta go take my chicken off the spit and dish up the corn on the cob! ;-)

J! Are you busy back to school? Tank has really been doing a nice job starting this place here and everyone pitches in to help and make suggestions for the menu but no one serves up a feast like you do...can't wait for your rainy days to start so you can get a hall pass:cheers:

Strange as it may sound, I am quite fond of bully beef. Its fantastic stuff, it can be fried covered in batter, made into a stew, mixed with mashed potato and fried and finished with a fried egg on top, or simply eaten cold with salad.

I took my kids on a safari, for one evening meal I made a stew in a cast iron pot over a fire using corned beef, chucking in carrots, spuds, peas, cauliflower, onions, baked beans, OXO cubes and Bisto and left it to bubble away. In the mean time I had baked a fresh beer bread loaf, with grated cheese on top and with cheese, onion and garlic in the dough.

I served it up, my kids wolfed it down, even asking for seconds. In the end my son had the pot between his legs, and using slices of beer bread mopped up what was left in the pot. I asked "Did you enjoy that son?" He nodded still chomping away.

My wife does a mean tattie hash. Peel and slice potatoes, put in a pan of boiling water (just enough to cover the potatoes) and simmer. Whilst cooking, peel and dice an onion and throw in with the tatties. Cube a tin of corned beef and add to the pan and simmer till cooked to the consistency of chunky mash. Beautiful served with sausage Bacon and fried egg. ;)
