Bad Boys II or Ronin. Ronin was definately the most realistic but the highway chase on Bad Boys II pretty much kicked ass.

Ronin, Bullit, but on the Steve Mcqueen genre even though it wasn't a car chase, the motorcycle chase at the end of The Great Escape. Also, Smokey and the Bandit!

hmm Ronin, Bullit are good, but there is a little unknow car chase in a movie call "Duel" from Steven Spielberg. I think the way that chase was shot and done marks it as one of the best ever.
