but who (and more importantly) WHAT is a pongo/crab?

Brit is a pongo/crab. Pongo is a slang term for British soldiers, crab is a slang term for the Royal Air Force, frog is a cabbagehead, which is Royal Marines on account of their green berets, and tanky is chavalry, or armoured cavalry

The navy and air force call the army pongos, as everywhere the army goes, the pong goes! Brit has served in both the army and air force hence pongo/crab. ;)
